Ingredients:
- 100g of dark chocolate (70% cacao or higher)
- 2 large eggs
- 25g of granulated sugar
- 150ml of heavy cream
- 1 tsp of vanilla extract
- A pinch of salt

Instructions:
- Melt the dark chocolate in a double boiler or heatproof bowl over simmering water until smooth. Remove from heat and let it cool slightly.
- In a mixing bowl, whisk the eggs and sugar together until they become pale and fluffy.
- In another bowl, whip the heavy cream until soft peaks form, then gently fold in the vanilla extract.
- Gradually combine the melted chocolate with the egg mixture, stirring until well incorporated.
- Carefully fold the whipped cream into the chocolate-egg mixture in batches, ensuring not to deflate the mixture.
- Season with a pinch of salt, then spoon the mousse into a ramekin or serving dish.
- Chill for at least 30 minutes before serving to allow it to set.
