Ingredients:

  • 250g of high-quality dark chocolate (70% cocoa)
  • 100g of unsweetened cocoa powder
  • 200g of granulated sugar
  • 100ml of heavy cream
  • 50g of unsalted butter
  • 1 tsp of vanilla extract
  • Pinch of salt

Kitchen Tools Needed:

  • Saucepan
  • Whisk
  • Spatula
  • Candy thermometer
  • Baking dish

Instructions:

  • In a saucepan over low heat, combine the dark chocolate and unsalted butter, stirring until melted and smooth.
  • In a separate bowl, mix granulated sugar, cocoa powder, and salt.
  • Once the chocolate is melted, gradually stir in the sugar and cocoa mixture until fully incorporated.
  • Add heavy cream and continue to stir until the mixture thickens and reaches a temperature of 115°C using the candy thermometer.
  • Remove from heat and add vanilla extract to enhance the flavor.
  • Pour the fudge mixture into a lined baking dish, smoothing the top with a spatula.
  • Let the fudge cool at room temperature for at least 2 hours or until fully set.
  • Once set, cut into squares and serve.
