Ingredients:
- 250g of high-quality dark chocolate (70% cocoa)
- 100g of unsweetened cocoa powder
- 200g of granulated sugar
- 100ml of heavy cream
- 50g of unsalted butter
- 1 tsp of vanilla extract
- Pinch of salt

Instructions:
- In a saucepan over low heat, combine the dark chocolate and unsalted butter, stirring until melted and smooth.
- In a separate bowl, mix granulated sugar, cocoa powder, and salt.
- Once the chocolate is melted, gradually stir in the sugar and cocoa mixture until fully incorporated.
- Add heavy cream and continue to stir until the mixture thickens and reaches a temperature of 115°C using the candy thermometer.
- Remove from heat and add vanilla extract to enhance the flavor.
- Pour the fudge mixture into a lined baking dish, smoothing the top with a spatula.
- Let the fudge cool at room temperature for at least 2 hours or until fully set.
- Once set, cut into squares and serve.
