Ingredients:
- 100g of quinoa
- 200ml of vegetable broth
- 50g of cherry tomatoes
- 30g of avocados
- 100g of chickpeas (cooked)
- 30g of feta cheese
- 10g of fresh basil
- 15ml of olive oil
- 10ml of balsamic vinegar
- Salt to taste
- Pepper to taste

Instructions:
- Rinse the quinoa under cold water and drain.
- In a saucepan, combine quinoa and vegetable broth, bring to a boil, then reduce to a simmer and cover. Cook for about 15 minutes or until the quinoa is fluffy and liquid is absorbed.
- While the quinoa is cooking, preheat your oven to 200°C (390°F) and roast the cherry tomatoes on a baking tray for about 20 minutes until blistered.
- In a mixing bowl, combine cooked quinoa, roasted cherry tomatoes, chickpeas, diced avocado, and crumbled feta cheese.
- Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste.
- Garnish with fresh basil before serving.
