Rice Pudding

Ingredients:

  • 100g of Arborio rice
  • 500ml of whole milk
  • 100ml of heavy cream
  • 50g of sugar
  • 1 tsp of vanilla extract
  • 1 pinch of salt
  • 50g of raisins
  • Cinnamon stick for garnish

Instructions:

  • Rinse the Arborio rice under cold water until the water runs clear to remove excess starch.
  • In a saucepan, combine the rinsed rice, whole milk, and a pinch of salt. Bring to a gentle simmer over medium heat, stirring occasionally to prevent sticking.
  • Once it reaches a simmer, reduce the heat to low and cook uncovered for about 45-50 minutes, stirring frequently until the rice is tender and the mixture thickens.
  • Add the heavy cream, sugar, vanilla extract, and raisins to the rice mixture. Stir well and continue to cook for an additional 10 minutes, allowing the flavors to meld and the pudding to thicken further.
  • Once the pudding reaches a creamy consistency, pour it into a serving dish and allow it to cool for a few minutes before serving.
  • Garnish with a cinnamon stick before serving.
