Flourless Cakes

Ingredients:

  • 250g of dark chocolate (at least 70% cacao)
  • 150g of unsalted butter
  • 150g of granulated sugar
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 100g of unsweetened cocoa powder
  • a pinch of salt

Kitchen Tools Needed:

  • mixing bowl
  • whisk
  • 9-inch round cake pan
  • parchment paper
  • oven

Instructions:

  • Preheat your oven to 190°C (375°F) and line the bottom of a 9-inch round cake pan with parchment paper.
  • In a mixing bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave, stirring until smooth and fully combined.
  • Once melted, remove from heat and whisk in the granulated sugar until well blended.
  • Add the eggs, one at a time, whisking well after each addition. Stir in the vanilla extract.
  • Sift the unsweetened cocoa powder and salt into the chocolate mixture, and fold gently until no dry cocoa powder remains, being careful not to overmix.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs but not wet batter.
  • Allow the cake to cool in the pan for 10 minutes, then carefully remove it and place it on a wire rack to cool completely before serving.
